Your dining experience begins with a glass of Devaux Coeur des Bar Blanc de Noirs, a rich and expressive 100% Pinot Noir Champagne from the Côte des Bar — a subregion closer to Burgundy, renowned for its Pinot-driven cuvées. Expect generous notes of ripe fruits, black cherry, crème de cassis, and brioche. The journey continues with two whites and two reds from your selected theme, each showcasing the diversity of Wine Clique’s portfolio. To conclude, enjoy a glass of Quinta do Noval Colheita 2005 — a rare, 20-year-aged tawny Port from a historic estate dating back to 1715, known for its iconic Nacional bottling. This silky, complex wine offers layers of dried fruit, toasted nuts, caramel, and a touch of citrus.

Begin your journey with Grenache Blanc, a key white varietal of Southern Rhône — notably used in the prestigious Rayas Blanc. Les Tours Grenache Blanc is crafted by the same winemaker, Emmanuel Reynaud. Next is a St Joseph Blanc, a Marsanne-Roussanne blend by artisanal producer Tardieu Laurent, known for its small-batch Rhône wines. The reds spotlight Syrah, starting with Jean Luc Colombo’s Cornas Les Ruchets 2018, now led by daughter Laure Colombo. To compare, enjoy a Hermitage from Marc Sorrel, whose family vineyards in Tain-l’Hermitage feature old vines famed for producing elegant, age-worthy wines.

This pairing highlights the bold aromas and rich flavours of the Rhône. It begins with Bonserine Condrieu 2020, an aromatic 100% Viognier from a top Cote Rotie estate owned by the Guigal family. Next is the powerful Hermitage Blanc Les Rocoules from Marc Sorrel, crafted by Guillaume Sorrel using traditional, low-intervention methods — the 2023 vintage earned 100 points from James Suckling. The reds feature Tardieu Laurent’s Châteauneuf-du-Pape Vieilles Vignes 2021, known for its intensity and expression of Rhône terroir, followed by Fonsalette Rouge 2012 by Emmanuel Reynaud (of Rayas fame), a structured and savoury wine from a biodiverse estate with just 12ha of vineyards.

This pairing journeys through Burgundy — from Chablis and Rully to Pommard and Nuits St Georges. The first two whites, from the Defaix family (Chablis Village and Rully 1er, 2022), showcase subtle, lime-scented minerality from a vintage praised for its quality and charm. The first red is a 2020 Pommard Les Vaumuriens by Domaine Chantal Lescure, now led by Jean-Philippe Girard and Eric Rousseau. The second is a 2021 Nuits St Georges Vieilles Vignes by Robert Chevillon, known for elegant, age-worthy wines with signature smoothness and complexity.

This Premier and Grand Cru journey showcases Burgundy’s terroir, beginning with Dauvissat’s Chablis 1er Vaillons Vieilles Vignes 2020 — a classic expression of Kimmeridgian soils. Next is a rare Meursault Genevrières 1er Cru (Hospices de Beaune) raised by Pierre-Yves Colin-Morey, renowned for his precision and finesse. The first red, Nuits St Georges 1er Clos des Forêts Monopole 2022 from Domaine de l’Arlot, offers layered dark fruit complexity under winemaker Géraldine Godot. Finally, Domaine Ponsot’s Corton Grand Cru Cuvée du Bourdon 2016 impresses with vibrant red berries, floral notes, and a refined, saline finish.
