"Geological characteristics
A partial enclave of Château Pavie Decesse on the Saint-Émilion clay-limestone plateau, the terroir is located 80m above the Dordogne valley. Bellevue Mondotte’s terroir combines : meagre soil, southfacing sun exposure, excellent natural drainage thanks to its hillside location. A great vineyard !

Growing methods
Green harvesting, with a first leaf-stripping operation on the sunrise side of the rows in late June, and a second one on the sunset side in mid August.
 
Vinification
Grapes hand-picked then sorted. Alcoholic fermentation started up naturally in temperature-controlled wooden vats. The wine is kept on the skins for 3 to 5 weeks. Malolactic fermentation takes place in barrel.
 
Château Bellevue-Mondotte is barrel-aged for six months on its lees (100% of new oak) for a total of aproximatively 24 months. Final blending takes place just before bottling, and the wine is neither fined nor filtered."
