Francois Mikulski is one of the rising stars of Burgundy winemakers and had his first debut on his 1992 vintage. Francois studied winemaking and worked in the vines in California in 1983 to learn the difference between the traditional ways of Burgundy winemaking versus the contemporary techniques used in the United States.
Without a family or bloodline of winemakers to follow, Francois (a Polish descent) found it easier to craft his wines in accordance with the ways, style and techniques he wants and one of those can obviously distinguish on his bottle - A breather on traditional Burgundy labels.
His style of winemaking starting from delicate pressing and severe must settling, Natural yeasts are sufficient for sugars to ferment for a period of three to four months in cool cellars built in solid rock, with constant temperatures of 6°C to 8°C in winter. The wines are matured in oak barrels for 12 months on the lees and blended in tanks for natural clarification and fining.
